Gavin Vineyard, named for Kathy’s family, comprises two blocks adjacent to the winery. These vines produce low yields of fruit with concentrated flavors. We harvested into small bins and went directly to press with whole clusters to minimize handling. Gentle pressing, a short settling period and barrel fermentation with a wide array of yeasts helped create complexity while preserving fruit character. Extended aging sur lie added richness and helped integrate French oak notes with the fruit. This complex wine has forward citrus and Granny Smith apple notes layered with yeasty toast and sweet oak.
